Ingredients

  • 6 average potatoes, peeled and quartered lengthwise
  • cup olive oil or butter, softened
  • 1/2 cup water
  • 1/3 cup fresh lemon juice
  • zest from 2 lemons
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1-2 Tablespoons sugar, adjusted to taste

Directions

  1.  Preheat oven to 350 degrees F (175° C).
  2.  Peel and quarter potatoes lengthwise; rinse well and pat dry with a paper towel.
  3.  In a small bowl, mix olive oil/butter, water, lemon juice, zest, salt and sugar. Mixture should taste like very strong rather sour lemonade.
  4.  Arrange potatoes evenly in a single layer in the bottom of a large baking dish.
  5.  Pour the olive oil mixture over the potatoes. Sprinkle with the oregano.
  6.  Cover, and bake 1 ½ to 2 hours in the preheated oven, turning occasionally, until tender but firm. You may choose to cook the potatoes longer to caramelize them a bit.
