Ingredients
- 6 average potatoes, peeled and quartered lengthwise
- cup olive oil or butter, softened
- 1/2 cup water
- 1/3 cup fresh lemon juice
- zest from 2 lemons
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1-2 Tablespoons sugar, adjusted to taste
Directions
- Preheat oven to 350 degrees F (175° C).
- Peel and quarter potatoes lengthwise; rinse well and pat dry with a paper towel.
- In a small bowl, mix olive oil/butter, water, lemon juice, zest, salt and sugar. Mixture should taste like very strong rather sour lemonade.
- Arrange potatoes evenly in a single layer in the bottom of a large baking dish.
- Pour the olive oil mixture over the potatoes. Sprinkle with the oregano.
- Cover, and bake 1 ½ to 2 hours in the preheated oven, turning occasionally, until tender but firm. You may choose to cook the potatoes longer to caramelize them a bit.
