Directions
- Cook ground beef with a little salt in a pan on stove over medium heat until brown. Drain grease and set aside. Remember not to put grease down the drain!
- Bring a small-medium pot of water to a boil on the stove. Carefully add sweet potatoes, bring back to a boil, then reduce to a simmer. Cook until potatoes are soft enough to insert a fork, roughly 15-20 minutes. Drain when done and return to pot, remembering to turn off stovetop.
- Add milk and butter to potatoes, and carefully mash together. Add in curry powder. This is a good time to taste and adjust flavor to your liking.
- To ground beef, add frozen vegetables, Worcestershire sauce, tomato sauce, vinegar, flour, salt & pepper. Mix, then add to a glass baking dish. Carefully add a layer of mashed potato mixture and level out.
- Bake at 350 degrees until potatoes are starting to brown on top, roughly 20 minutes. Serve hot and enjoy!
